The envy of all bootleggers

When it comes to unaged whiskey, there is nowhere to hide. You don’t have the benefit of the barrel to round out rough edges, and poor execution can lead to something undrinkable. When done well, however, white whiskey is a complex spirit that showcases the true flavor of the grain.

For this reason, grain choice is critical. We use a mashbill of 100% hard red winter wheat because wheat is full of fruit notes, it’s and is less abrasive than a grain such as corn. We also distill our unaged whiskey at a higher proof, which creates cleanliness you would otherwise get from the barrel. The result is a spirit nuanced enough to drink on its own, but, like most clear spirits, works wonderfully in cocktails.

But just like tequila blanco, white rum, or eau de vie, there are things you can do with un-aged whiskey that simply don’t work as well with its barrel aged counterpart.

Orange Crush

  • 1.5 oz White Whiskey
  • 3 oz orange juice
  • 2 oz soda water
  • Angostura bitters
  • Angostura orange bitters

Mix White Whiskey, soda water and orange juice. Add ice and stir. Top with 2 dashes of Angostura bitters and 2 dashes of Angostura orange bitters.

Indian Summer

  • 6 fresh mint leaves
  • .5 oz honey
  • 1.5 oz White Whiskey
  • 4 oz local apple cider

Muddle fresh mint leaves. Add honey and White Whiskey. Stir until the honey dissolves. Add ice, top with local apple cider.

Risky Whiskey

  • 1.5 oz White Whiskey
  • Ginger beer, ginger ale or San Pelligrino Limonata
  • Angostura bitters

Add ice to White Whiskey. Top with ginger beer, ginger ale, or San Pelligrino Limonata. Float 3 dashes of Angostura bitters on the surface.

Bully Day

  •  5 mint leaves
  • 1.5 oz White Whiskey
  • .75 oz simple syrup 
  • 3 oz white grapefruit juice

Muddle mint leaves. Add White Whiskey, simple syrup and white grapefruit juice. Top with ice and mint garnish. (Courtesy of Trade Restaurant)
